Cup vs ml: Which Measurement Should You Cook With?
Cups are fast, millilitres are accurate. The right choice depends on what you are making — and for baking, the answer is not cups.
The core difference
A cup is a volume scoop that varies by country (237 / 250 / 284 ml) and by how firmly you pack it. A millilitre is a fixed volume everywhere. For liquids the gap is small; for dry goods it is large.
Why baking punishes cups
One cup of flour can weigh 110 g scooped loosely or 145 g packed — a 30% swing that changes hydration and ruins bread and pastry. Liquid measures do not have this problem.
Where cups win
Soups, stews, sauces, rice-to-water ratios and anything where a 5% error is invisible. Cups are faster and need no equipment.
The conversion you'll need most
1 US cup = 237 ml · 1/2 cup = 118 ml · 1/3 cup = 79 ml · 1/4 cup = 59 ml · 1 tbsp = 14.8 ml · 1 tsp = 4.9 ml.
Weight is the real answer for baking
1 cup: flour 120 g · granulated sugar 200 g · brown sugar packed 220 g · butter 227 g · milk 240 g · cocoa 85 g. A £10 digital scale removes every conversion problem at once.
Reading recipes from other countries
US recipe → 237 ml cup. Australian → 250 ml cup and a 20 ml tablespoon. Old British → 284 ml cup. Check the origin before you scoop.
